There is also space left open next to the rail to operate as an additional work area. Plus, it also includes a 9 1/2" deep, 1/2" thick high-density polyethylene cutting board as a space to prep orders and slice ingredients. <br><br> For efficient cooling, an innovative cold bunker, forced air system provides even cooling by completely surrounding the food pans with cold air. This directs air around the pan rail too, for excellent temperature retention. The powerful 3/8 hp refrigeration system runs on eco-friendly R-290 refrigerant to keep food at temperatures between 33 and 39 degrees Fahrenheit, which can be monitored using the easy-to-read electronic display. <br><br> This unit has extra cold storage with 3 foamed-in-place, CFC-free polyurethane insulated cabinets with one stainless steel shelf in each cabinet to organize product.
