Providing the convenience of faster cook times and even pan-to-pan cooking, the unit doubles as a holding unit, preventing quality loss while dependably maintaining temperatures. This steamer is extremely efficient using less than 1 gallon per hour. The different performance modes enable you to accommodate for faster speed times or greater efficiency.<br><br>On the front of the unit, there are easy-to-use digital controls that also have a temperature display. The heavy-duty, field reversible door can be opened at any time during the cook process. For convenient clean-up, the wire pan racks, steam collector, distributor panels, and condensate tray are dishwasher-safe. The steamer can hold up to (6) 2 1/2" deep full size pans or (4) 4" deep full size pans. Built with 14-gauge stainless steel, the steamer cavity is made to last. This unit requires a three phase 208V connection. The Evolution electric steamers are EPA 202 Certified which means no hood is required (please check with local authorities).
