Quickly and efficiently cool your food through the temperature danger zone to protect meats, fish, and other foods from bacteria that could cause food-borne illness. Adjust the chill cycles or product target temperatures from 40 to -5 degrees Fahrenheit easily with the intuitive touch screen control and automatic or manual operation. This blast chiller can accommodate up to (1) 27" x 29" x 72" roll-in rack.<br><br>Traulsen's correctional products feature superior safety and security measures, including a locking hasp and removable plug cylinders on the doors, and a high-impact lexan cover around the control box to prevent tampering. Additionally, the unit is assembled using safety screws to prevent component theft. The cabinet includes 3 removable food probes so you can either control your blast chill cycle automatically by internal temperature or set a timer, depending on the temperature of the items in the chiller. The chiller can be set to 4 different modes: blast chill, speed, energy saving, and delicate. When the chill cycle is complete, this unit's built-in label printer will provide you with the appropriate HACCP documentation to keep track of the status of your food items. HACCP documentation prevents accidental contamination or use of products that may contain harmful bacteria that could in turn cause food-borne illness. To help you better implement your HACCP plan, this blast chiller records dates, temperatures, and times of different cycles so that you can track how long it takes certain foods to cool, freeze, or thaw. These readings can be configured into customizable reports and exported via USB, making record keeping easy. <br><br>The door is self-closing with an EZ-clean gasket to prevent cold air from escaping and a door heater that prevents condensation from forming on the cabinet front. This unit is left-hinged, and can be installed in a convenient location, even if you don't have extra space for ventilation clearances.<br><br>With both the interior and exterior being composed of stainless steel, you can be sure it will hold up to the wear and tear of a commercial kitchen.
