The steamer can hold up to (6) 2 1/2" deep full size pans or (4) 4" deep full size pans. Built with 14-gauge stainless steel, the steamer cavity is made to last. There is no need to connect water or drain line, as this unit has a 3 gallon reservoir and uses less than 1 gallon per hour. This unit requires a 208V connection. The Evolution electric steamers are EPA 202 Certified which means no hood is required (please check with local authorities).
