Grow Fenugreek herbs / vegetables, from freshly harvested Trigonella foenum-graecum seeds. Fenugreek is harvested for culinary uses. It's leaves can be used as an herb, fresh or dried, while it's seeds are used as a spice and it's young leaves, sprouts and greens are used as a vegetable. When you open up your package of Fenugreek seeds, you will immediately notice the strong fragrance that the seeds give off. They can be used whole, or ground up to add flavoring to many Indian dishes and curries. The sprouts are typically a few inches tall and can be ready for picking within 3 to 5 days after sprouting. Grown plants reach a mature height of 16 to 18 inches. Fenugreek is of course an annual herb. It will grow very rapidly from freshly harvested seeds, to be harvested and consumed soon after. If the plants are allowed to go to seed, or "bolt," you can collect the seeds for additional sowings.
