Briess 2-Row Caramel 60L is a medium crystal malt made with 2-row barley. It imparts deep gold and reddish hues, rich sweetness, and pronounced caramel flavor. Usage is progressive, starting light to balance pilsners and reaching the maxiumum 15% to impart color and sweetness to darker ales, stouts, and porters.

Briess Black is a dark roasted malt made from 2-row barley. It has a dry, roasted flavor that is slightly sharp but surprisingly neutral. It imparts dark brown to black color to wort, but unlike roasted (unmalted) barley, Black malt has little affect on the foam color of the finished beer. Briess Black malt can be used in small quantities (1-3%) to add color to any style beer with little or no flavor. It is typically used in higher quantities and often in combination with other roasted grains for darker beers like porters and stouts.

Roasted, unmalted barley has a dry, coffee flavor with an intense bitterness and imparts deep brown color to wort that affects the foam color of the finished beer. The sharp flavor of roasted barley is characteristic of classic porters and stouts. But it can also be tempered with black or chocolate malts for milder results.

Chateau Cara RubyT is a light-colored, Belgian crystal malt. It imparts a rich caramel-sweet aroma and a toffee-like flavor. It adds light amber to copper hues to beer. Crystal malts also add body and improve head retention. Cara RubyT is best suited to amber, brown, and Scottish ales, bocks, and Brune des Flandres.
